As a child, I loved those chocolate pudding snack pots that my mum would buy from the supermarket, especially when they were packed as a treat in my lunchbox for school. Unfortunately as I’ve gotten older, I came to the realisation that they were packed with sugar and other stuff that wasn’t really that healthy for me. Chia puddings are a nutritious and filling snack, or an easy quick breakfast. You can choose to blend this recipe if you like, which creates a smoother, more pudding-like texture, but it is just as nice left un-blended.
Easy Chocolate Chia Pudding
1 & 1/4 cups milk of choice
1/4 cup chia seeds
1/4 cup cocoa or cacao powder
3 tbs maple or rice malt syrup
1/4 tsp vanilla essence
Toppings of choice, optional (fresh or frozen fruit, chocolate or cacao chips, nuts or coconut)
- Combine all ingredients in blender and blitz until smooth. If not blending, mix together well in a bowl.
- Divide mixture between 2 small bowls, or 4 small snack pots if packing in the lunchbox.
- Place in fridge and allow to set for at least 3 hours. Serve with favourite toppings.
Make 2 large individual serves for breakfast, or 4 smaller individual serves for snacks/lunchboxes.
