Pancakes are a breakfast staple in my household, and are always served with whipped cream, maple syrup and sliced strawberries. Pikelets (mini-pancakes) are also popular in my kid’s lunchboxes as a sweet treat, or for snacks on picnics and car trips. I use spelt flour in all my recipes, however you can easily swap out this for regular plain flour if you wish.
2 heaped cups spelt flour
2 tsp baking powder
2 tbs sugar or sweetener
2 eggs, lightly beathen
1 tsp vanilla extract / essence / paste
2 cups milk
- Sift flour and baking powder together. Mix in other ingredients until well combined.
- Heat a large frying pan over medium heat and grease with a little olive oil or butter.
- Pour approximately 1/4 cup of batter into the hot frying pan. Once bubble appear on the surface of the pancake, carefully flip and cook the other side until golden brown. Repeat with remaining batter.
Makes approximately 8 large pancakes, or 24 small pikelets.
